In the Chippewa Valley, Smackdaddy’s Gourmet Grub operates in an entirely different stratosphere. Run by Heath and Holly, this truck delivers an unapologetic, heavy-hitting collision of Cajun soul and Mediterranean depth that makes most brick-and-mortar kitchens look like they’re phoning it in from a nursing home.

Better yet? They are a fixture on the patio right across the street from our home studio at The Brewing Projekt—meaning world-class culinary execution is literally a stumble away from the mixing board.

If you aren’t tracking them down, you are actively failing at eating.

The Heavy Hitters

Let’s talk execution, because this menu reads like a masterclass in flavor architecture:

  • The Smack-Fredo: Forget the heavy, gluey paste drowning generic noodles at chain joints. This is alfredo engineered properly—rich, clinging aggressively to the pasta, and crowned with blackened chicken carrying actual heat, char, and attitude.
  • Loaded Smack-N-Cheese: A masterwork of pure excess. Penne smothered in a complex, aggressive Cajun cheese sauce, packed thick with blackened chicken, smoky andouille sausage, and shrimp. It’s comfort food with a passport and a grudge.

“Gourmet grub” is usually a corporate buzzword used to justify inflated prices on mediocre garbage. In Smackdaddy’s case, it’s an understatement.
